Meet the Soju Mojito — minty, limey, and refreshingly less committed to bad decisions than its rum-fueled cousin.
This Korean twist on a classic Mojito swaps in soju, the drink responsible for countless K-drama heartbreaks, late-night life advice, and enthusiastic cheers around a Korean BBQ table. Lighter in alcohol but every bit as charming, it's crisp, easy-drinking, and dangerously good at convincing you that one more is a great idea.
Perfect alongside Korean BBQ, savoury pancakes, or whenever you're feeling either wildly celebratory or dramatically emotional. Just like the stars of your favourite K-drama, this one knows how to handle both.
Ingredients
- 2-1/2 oz Soju
- 1-1/2 oz Simple syrup (more or less to taste)
- 1 oz Lime juice
- 5-6 Mint leaves
- Club soda or sparkling water
- Ice
Directions
- Add the mint leaves and lime juice to a cocktail shaker. Then muddle the mint leaves with a muddler or wooden spoon.
- To the muddled mint leaves & lime juice, add soju, simple syrup, a handful of ice and shake.
- Strain into a glass filled with ice and top with a splash of club soda. Garnish with a sprig of mint and lime slices.

- If using sugar instead of syrup, try adding 1 tsp per glass up to 1 Tbs if you like a sweeter drink.
- Tips for making a BIG BATCH for parties – Make a pre-mix of the soju, syrup (or sugar), lime juice in a pitcher and then just muddle the mint leaves in each cup with a splash of the soju mix, add ice and then top with some club soda. Garnish with some lime or mint leaves and it will be a hit at your party!!
- Skip making simple syrup and use Maesil Cheong Syrup that you can buy online or make one yourself!
